Zucchini Muffins
This recipe comes from my mom. It can be also made into a bread loaf if you would prefer
Ingredients
- 3 cups flour
- 1 cup sugar
- 2/3 cup brown sugar
- 2 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1 dash nutmeg
- 2/3 cup oil
- 4 eggs
- 2 tsp vanilla
- 3 cups shredded zucchinni
- 1/2 cup nuts or raisins
Directions
- Step 1 Mixed all the dry ingredients together in a large mixing bowl
- Step 2 Mix the oil eggs, vanilla, zucchinni, and nuts or raisins into the dry mixture
- Step 3 Put mixture into muffin pans or loaf pans. Either use muffin papers or grease the bottom of the pan.
- Step 4 Cook at 350ºF for 20-30 minutes for muffins or 50-60 minutes for loaves
